Description
These beautiful fish have long, tapering streamlined bodies, with a high ridge of fin running down the body from the head to the forked, swallow-like tail. They are among the fastest swimmers, with a top speed of 50mph/80kph. Their skin changes colour as they swim, from green and gold to silver and grey, with gold and blue spots. The average weight is about 2.5kg/5.5kg but fish have been known to grow to ten times that weight.
Instructions: Defrost prior to cooking. The Hawaiians eat mahi mahi raw, but it is best grilled or fried. It marries well with spicy flavours and delicious with a piquant salsa.
