Description
Arguably the finest fish of all. Their oval bodies are well proportioned, with greyish or lightish brown skin, sometimes spotted with black. Dover sole can weigh up to 3kg/6.5lb. Dover sole are found in the English Channel and the Atlantic Ocean and also in the Baltic, Mediterranean and North Seas.
Instructions: – Defrost prior to cooking. Cook whole, or it is great skinned and dusted with flour then pan fried. Each fish can make 2 servings
There are many recipes for sole, but a plain lightly grilled fish served with a drizzle of melted butter and lemon juice is hard to beat.
