Delicately textured and mildly flavoured skate wings, perfect for pan-frying or baking with butter and capers.
INSTRUCTIONS: Defrost prior to cooking, poach the wings in water acidulated with a little vinegar or court-bouillon for about 12 minutes. Then drain and sprinkle with capers, brown some butter and pour it over the fish. Skate can also be grilled, deep-fried in batter or curried which makes a delicious salad.
